Distillation Process

 

This Gin is the provocative union of over half a dozen exotic botanicals, meticulously sourced from around the world. It uses Blue Mountains spring water, renowned for its high pH and zinc content. The locally brewed beer wort is fermented in-house for quality control, then distilled in a copper pot still. To ensure smoothness, the distillate is gravity-fed through columns filled with silver and walnut shell charcoal.

 

Some botanicals are distilled using traditional, time-honoured methods, while others are soaked in the distillate under pressure to preserve delicate phenolics and retain delicate aromatics. Using an internal blending process, these two gin components are infused together and mixed for several days to enhance integration. This unique technique retains the refined phenolics and raw aromatics of individual Botanicals, an ultimate blend of tradition and innovation.

 

The resulting Gin has rich, earthy flavours, fragrant oriental spices, and a smooth, velvety palate with a lingering finish that leaves a lasting impression.

Appearance: Crystal clear with a subtle silvery sheen, reflecting its meticulous distillation and skilled craftsmanship.

 

Nose: Aromatic and multi-layered. Fresh juniper leads, followed by a captivating blend of Green and Black cardamom—herbal, warm notes and slightly smoky. Green cardamom adds freshness, while black cardamom brings a gentle smokiness. Fennel seeds contribute delicate sweetness, balanced by subtle citrus and earthy botanicals.
