DISTILLATION PROCESS
Our whisky is crafted with Blue Mountains (NSW) spring water, renowned for its high pH and zinc content. The locally brewed beer wort is fermented in-house for quality control, then double-distilled in a copper pot still. To ensure smoothness, the distillate is gravity-fed through columns filled with silver and walnut shell charcoal.
The whisky develops its character by ageing in hand-selected American Oak barrels for a minimum of 8 years. The result is a whisky with a truly one-of-a-kind taste, a delicate earthy aroma, and a lingering finish that leaves you wanting more.

This Australian whisky, matured in Pinot Noir barrels, is a testament to the artistry of cask maturation. Appearance: The Australian Whisky aged in Pinot Noir barrels displays a striking coppery-amber hue. Swirling the glass reveals a syrupy viscosity, with legs that slowly cascade, hinting at the whisky's oily texture.
