DISTILLATION PROCESS

Our whisky is crafted with Blue Mountains (NSW) spring water, renowned for its high pH and zinc content. The locally brewed beer wort is fermented in-house for quality control, then double-distilled in a copper pot still. To ensure smoothness, the distillate is gravity-fed through columns filled with silver and walnut shell charcoal.

The whisky develops its character by ageing in hand-selected American Oak barrels for a minimum of 8 years. The result is a whisky with a truly one-of-a-kind taste, a delicate earthy aroma, and a lingering finish that leaves you wanting more.

WHISKY PROFILE

This Australian whisky, matured in Pinot Noir barrels, is a testament to the artistry of cask maturation. Indulge in the perfect union of bold whisky flavours and the refined, fruit-driven characteristics of Pinot Noir, resulting in a distinct whisky with slow-forming legs that indicate an oily texture. The aroma features ripe cherry and plum, complemented by warm vanilla and subtle earthy oak notes. Every sip offers a well-balanced blend of red fruits, nuttiness, malt, dark chocolate, and subtle oak spice. Whether enjoyed neat or with a splash of water, this whisky promises a captivating journey for the discerning palate. 

Appearance: The Australian Whisky aged in Pinot Noir barrels displays a striking coppery-amber hue. Swirling the glass reveals a syrupy viscosity, with legs that slowly cascade, hinting at the whisky's oily texture.

Nose: Opens with a captivating blend of fruity and spicy aromas. Notes of ripe cherries and a touch of plum greet the senses, highlighting the influence of the Pinot Noir casks. A subtle oak undercurrent adds a warm, vanilla sweetness, complemented by hints of clove.

Palate: Upon the first sip, the whisky unfolds a symphony of flavours that harmonise the robust character of Australian Whisky with the delicate nuances of Pinot Noir.
