French Oak (Chard Barrel) Whisky


DISTILLATION PROCESS

Our whisky is crafted with Blue Mountains (NSW) spring water, renowned for its high pH and zinc content. The locally brewed beer wort is fermented in-house for quality control, then double-distilled in a copper pot still. To ensure smoothness, the distillate is gravity-fed through columns filled with silver and walnut shell charcoal.

The whisky develops its character by ageing in hand-selected French Oak barrels from Hawke’s Bay, NZ, previously used for Chardonnay fermentation. The result is a whisky with a truly one-of-a-kind taste, a delicate, earthy aroma, and a lingering creamy finish that leaves you wanting more.

  TASTING NOTES

Appearance: The whiskey boasts a rich golden hue reminiscent of ripe Chardonnay grapes. Swirling the glass reveals a silky texture with slow, viscous legs that hint at the whiskey's complexity.

Nose: The initial aroma is a delightful fusion of sweet, floral, oaky notes. Citrus undertones intertwine with the subtle fruitiness of Chardonnay, offering a bouquet of green apple, pear, and hints of tropical fruits. Beneath, a gentle undertone of toasted oak and a touch of honey add depth to the olfactory experience.

Palate: As the whiskey coats the palate, the marriage of Chardonnay and whiskey flavours takes centre stage. The entry is sweet, with a burst of honey and citrus, reminiscent of Chardonnay's buttery and creamy profile. The mid-palate introduces a delicate interplay of orchard fruits, such as apple and peach, harmonising with the whiskey's robust backbone. The oak influence becomes more pronounced, offering notes of toasted almonds and a subtle spiciness.
