The Tawny Port Cask Influence

Our whisky is crafted using pristine Blue Mountains spring water and locally brewed wort, fermented under our supervision before being double-distilled in copper pot stills.

The spirit is then matured for 8 years in carefully selected oak barrels previously used for Tawny Port, allowing the whisky to slowly integrate with the rich flavours held within the fortified-wine-seasoned oak.

Tawny Port casks are particularly suited to creating rich, luxurious whisky. The seasoned oak contributes layers of dried fruit, dark fruit, caramel, toffee and gentle spice, while extended maturation allows these characteristics to integrate with the whisky's inherent malt depth.
