The Pinot Noir Cask Influence
Our whisky is crafted using pristine Blue Mountains spring water and locally brewed wort, fermented under our supervision before being double distilled in copper pot stills.
The spirit then matures for a minimum of 8 years in carefully selected American oak barrels previously used for Pinot Noir, allowing the whisky, oak, and wine-seasoned cask to develop together over years of maturation.
American oak contributes vanilla sweetness, structure and gentle spice, while the Pinot Noir cask brings layers of ripe red fruit, cherry, plum and subtle earthy complexity.
Extended maturation lets these characteristics integrate with the whisky's natural maltiness, producing an Australian single malt that is rich and complex while retaining elegance and balance.
